Can you grow morels at home?

Not reliably. There is no home or cellar method for morels. They are grown on a large scale outdoors in fields in China, but even there the yield is very unpredictable.

How does field cultivation work?

The spawn goes into the soil in autumn, with nutrient bags on the bed. Fruiting starts in spring from 6–8 °C. The first pins appear at 6–10 °C with more than 10 °C difference between day and night. Above 20 °C no good fruiting bodies form.

How uncertain is the harvest?

On Chinese fields the yield varies from 0 to 7,620 kg per hectare, usually 0 to 3,000 kg. Cold snaps caused large losses, and why morels do or do not fruit is still poorly understood.

Always cook well

After an outbreak in Montana in 2023, 51 people fell ill and 2 died after eating cultivated morels from China. Eating them raw was most strongly linked to falling ill. So never eat morels raw.
