Can you eat mushrooms raw?

Better not. The Voedingscentrum (Dutch Nutrition Centre) advises against eating mushrooms raw: harmful bacteria such as listeria may be present, and they contain agaritine, which is partly broken down by heating. So always cook your harvest.

Shiitake: skin rash

Raw or undercooked shiitake can cause an itchy, streak-shaped skin rash in some people (flagellate dermatitis). According to ANSES, a quick stir-fry is not always enough; Mushroom Mania advises about 20 minutes of boiling or heating.

Enoki: listeria

In the US, enoki has been linked to Listeria outbreaks. The CDC advises heating enoki thoroughly, keeping raw enoki separate from ready-to-eat food and cleaning hands, containers and surfaces after contact. Pregnant people, people over 65 and people with a weakened immune system are most at risk.

Morels

After an outbreak in Montana in 2023, 51 people fell ill after eating cultivated morels; eating them raw was most strongly linked to falling ill.

Never freeze mushrooms raw: blanch, steam or sauté them first.
