Storing, drying and freezing oyster mushrooms

Store fresh oyster mushrooms unwashed in the fridge, in a paper bag or the original tray, and use them within 2 to 3 days. If you want to keep them longer, dry them or cook them first and then freeze them. Never eat them raw.

These guidelines apply to mushrooms in general. They have not been studied separately for oyster mushroom.

In the fridge

Store them unwashed, in a paper bag or the breathable tray, not in a closed plastic bag: that causes condensation and they spoil faster. Only wash or wipe them just before use. Expect 2 to 3 days.

Drying

Clean them, remove hard parts such as the base, slice them and dry them in a food dehydrator for about 8 to 10 hours until brittle. The source does not say how long dried oyster mushroom keeps.

Freezing: cook first

Never freeze mushrooms raw. Blanch or steam them first, or sauté them in butter until almost done. Steaming times according to the NCHFP: whole 5 minutes, buttons or quarters 3.5 minutes, slices 3 minutes. Cool them quickly and freeze them with some headspace in the packaging. After about 3 months the quality declines.

Why not raw?

The Voedingscentrum advises against raw mushrooms: harmful bacteria such as listeria may be present, and they contain agaritine, which is partly broken down by heating.

Cleaning

Preferably do not rinse oyster mushrooms under running water: they absorb moisture easily and go limp. Wipe them clean, or rinse them briefly just before frying and pat them dry.
